While I believe we should indeed be polite and gracious, I do *not* believe we should just ignore the fact that so many people just assume everyone celebrates xmas. What I do is smile, nod, thank them for the good wishes and then inform them "I don't personally celebrate that holiday, but I hope you have a wonderful holiday season and thanks for wishing me well." that works for me, and allows me to both be polite and welcoming of their good wishes, and to preserve my own individual Spirituality.
