I found a great resource that is an archive of history, timelines, oral histories, discussions and all sorts of material gathered from the Civil Rights Movement Veterans - http://www.crmvet.org/ There are photos, letters, posters, lots of primary sources like training manuals, the letters sent to those who were accepted to teach in the Freedom Schools--the list is extensive. There's even a list of speakers that you can contact to speak in your classes. It's very deep--definitely take a look to see what you can use in your lessons.
